On the side of the hills dominating the valley, once rose the 7 Moles, seven merry watermills, which clung to the meanders of the Roussec river, a capricious stream that descends from the high plateaus. We came there on Sundays to fetch white flour with full sacks and to drink the gaiety to the full. The grindstones of hard stone crushed, under the action of the big wheel, propelled by torrential waters, the wheat harvested in the region.
The miller's trade was prosperous in Sauveterre! These seven mills scattered among the nests of greenery gave a special character to this corner of Comminges.
Little by little, these artisans disappeared. All that remains today is the Tour du Barry on the hill in the center of the 11 Hamlets in the village of Sauveterre.
